  6. Then, put the stockpot with the tomatoes and put it on the stove and lightly saute tomatoes. Add puree, 1/3 cup olive oil, 1tbsp minced garlic (optional) and 3 tbsp of italian seasoning. Bring to medium temp and cover..

Next, take a shell, have one person hold the shell open carefully. The other person will then put a spoonful of ricotta cheese in shell. This can get messy but it is fun. Then, place a piece of chicken in the shell and allow it to close naturally. One side should fold over the other..
  11. Place first shell on cookie sheet. Repeat this process 5 times per person. When placing the shells on the sheet the points should be in a diagonal position. When 5 are completed it should look like petals of a flower or star and the points in the middle should touch..
  12. Once you have completed desired servings, turn temp of the oven to 400. While temp is rising, take out mozzarella cheese and place a slice on top of each set of five, the middle of cheese should line with the middle of the setting of shells..
